Thailand – Mango sticky rice

IMG_20190705_183613 (1)Mango sticky rice is a popular dessert from Thailand made with glutinous rice, fresh mango, palm sugar and coconut milk.

To prepare the dish, first soak the rice in water, then steam it or cook it in a rice cooker. Heat up the coconut milk with sugar and a bit of salt, until simmering, then set aside.
Once the rice is cooked, mix altogether the rice and coconut milk and let the rice absorb the milk. The rice is then served with slices of fresh and sweet mango that give a great contrast of texture to the dessert.

Make sure you preferably use a yellow mango, which has a sweeter taste than the green mango.

You can play a bit with some ingredients here and for example try out different types of sugar, like coconut sugar, brown sugar, maple sirup…. You can even replace the mango by other fruits. A favorite is durian, the famous “stinky’ fruit, give it a try!

Ingredients

1 cup (200 g) sticky rice
1/2 can coconut milk
1/2 cup (70 g) sugar (we chose brown sugar)
1 yellow mango, cubed
1/4 tsp salt
sesame seeds, to decorate


The day before :

Rinse the rice 2 times with cold water. Put the rice in a bowl and cover it with water.

The next day :

Rinse and strain the rice. Put it in a steamer and add 1 cup of water. Cook with the steam for 25 minutes.

In the meantime, heat in a little pan over medium-low heat the coconut milk with the sugar and the salt. Set it aside right when it starts simmering.

Once the rice is cooked, mix with it the coconut milk mixture and let the rice absorb it, for about 15 minutes.

Serve one layer of the rice, then one layer of the mango on a plate or in a glass. Top with sesame seeds for garnish.
